Shopping Around the World

This month we are highlighting easy dinner ideas for the summer months. Summer months are way too hot to be cooking in the kitchen making the house even hotter.

During these months, mom likes to go for ‘light’ foods that really don’t require a lot of cooking.  When mom/dad went to Chicago in May, my Aunt Tina got this salad in the picture below at Richard Walker’s Pancake House.  Mom was so amazed about the beauty of it and knew that she could do the same when she got home and she did!  So although this picture is not one of hers, she replicated it perfectly and has many times in the past couple of weeks.  It’s very feeling and I know that first hoof because mom has fixed me some too.  I’m a lucky pig, right?  So without further ado, mom will give you the breakdown below.  Enjoy my friends… I know I do!

Grilled or shredded chicken.  I buy a rotisserie chicken at our local Sam’s Warehouse on Sundays.  It costs $5.00 and I break it up into three different meals for two people each.  Part of the shredded chicken goes into this this salad.  Breaking it into three different meals makes it cost $1.67 for two people on this salad.

A head of lettuce costs $0.99 and again breaks it up into three different meals.  That makes this part $0.33 for two people on this salad.

Shredded cheese.  I buy medium block cheese and got a block on special for $0.99 a block.  It’s really hard to ‘cost’ how much it would be for this salad.  I use it on a lot of different things and shred some for this salad.  I’m going to assume I cut the cheese block up into four sections.  With that being said, this part in the salad would be $0.25 for two people.

Boiled egg.  A dozen eggs cost me $1.29.  If I know we will be doing several salads in the week, I will go ahead and boil 6 of them at a time.  That way I’m ahead of the game.  Two eggs (for two people) for this salad cost $0.11,

Avocado.  I love slice avocado but the hub doesn’t.  I buy one avocado and split it into two meals.  Avocados were on sale for $1.00 so the salad part is $0.50.

Tomatoes.  I bought six medium sized Roma tomatoes at the market for $1.39 – that’s $0.24 per tomato and we use one per meal for two people.

Broccoli – a head of broccoli was $1.59.  Again, we break it up into many different snacks/meals.  It probably ranged $0.40 per meal for two people.

Dressing for the salad – the hub uses 1000 Island and I use Italian.  We pay $1.50 per bottle and it breaks down to about $0.25 per salad for two people.

Now the fun part – putting the salad together.  The only thing I didn’t put in the salad was shredded carrots.  Jim is not a huge fan so we left them out.  To build the ‘salad’, we put shredded lettuce on the bottom.  And when you do this, I make sure all of it is ‘bite sized’.  I hate it when you order a salad in a restaurant and you have to use a knife to cut it up because everything is cut too big.  Don’t you?  After the lettuce, I then place the items above on top like the picture. I add the salad dressing and then toss to get everything coated with the dressing.  Then it’s time to jump into that delicious salad and enjoy.  Final cost $3.64 for two people.

Officially Summer

June 21 is the official day of Summer –

Yay for Summer being here – boo for the heat.  No one likes the heat.  Heat is bad.  Momma says its swimsuit season.  Heck it should be because too much clothes and you would burn up!  Thank goodness Hotel Thompson has air conditioning.

I guess some of my pig friends have the right way in life.  Pull up a chair, crawl in and take a siesta outside in nature.  It is one way to get a little sun on your skin.  Me, I’d rather stay inside surrounded by air… cool air that is.

But with the heat, you also get some amazing munchies… like strawberries.  My friend here has the right ideal.  Get a bowl of those delicious berries, settle up to it and have your own eating competition.  Doesn’t he look like he’s grinning there because he’s so happy? snorts

For some reason, I’m craving strawberries now. I wonder why?

Week of  06/10-06/16/2018 – Week 23

“Dear Journal –  Baby steps.  I’ve been tweaking dinner options this week.  There really are some amazing foods that you can prepare that are totally tasty and the hub unit loves.  Planning is the key though.  I’m trying to do my cooking prep on Sundays for the week.  Then during the week, I pull from already cooked ingredients in the fridge.  It saves time and getting the house hot from actually cooking the first time.  What a time saver this is!  I can’t believe I haven’t tried this earlier.  But like they say, better late than never!”

I’ve Created a New Season – Happy Sprinter

This picture is from Wikipedia.  It shows the typical seasons – Spring, Summer, Fall and then Winter.  That’s the way it’s suppose to fall.  But this year, dear old Mother Nature is not playing fairly.  Mommy says she needs hormone shots and daddy says she needs more dates with Father Time.  I’m not sure which one is right.  I just know that maybe she needs a kick in the butt.  Yep, I said.  I kick right smack in the middle of her captains quarters.

You see, this weekend is what I’m talking about.  Saturday here at the Hotel Thompson we get up and it is beautiful.  There’s no other way to put it.  The birds are chirping (and that’s a story for another time – snorts), the sun is out, the wind is just right and the temperatures are in the 60’s.  You couldn’t ask for a more gorgeous day.

Our neighbor Big Daddy had cut our yard and the back yard was spectacular.  Thanks Big Daddy!  We went out there and ran for a while.  Mommy says it was for me to get some sun and I said I understood.  Secretly I knew she wanted me to run some excess Winter weight off so I would sleep more deeply tonight.  I’m good with that.  I just wonder why she didn’t make daddy do the same.  Double snorts.

It was a wonderful day.  Lots of running, loving and snuggles.

Then BAM!  What a change Sunday.  Sunday brought us rain, cool weather and strong winds.  We could actually sit inside and hear the winds!  We all got up and had breakfast together.  It was so damp and yuck outside that after breakfast, we all went back to bed.  Now, I’m not hating days like this because usually, like this day, when we go back to bed we all get on the Select Comfort for a siesta.  It was great.

Picture this.  A king sized Select Comfort bed with two humans, one purr things, one pooch and a piggy.  Snorts, Me and Houdini are a 65 with mommy on the Select Comfort.  Daddy and Hemi are a 100.  That’s just too hard for this little oinker.  When we got up from our nap, it was still yuck outside.

Now, I’m telling you all of this for a reason.  It’s suppose to be Spring but it still acts like Winter.  I’m suggesting a new season called – Sprinter.  You get it?  Spring with Winter.  So sometime today, tell someone Happy Sprinter.  Then smile and remember my little story here.  🙂

Today, September 4th is Labor Day.  Labor Day is celebrated every year on the first Monday of September and is a United States federal holiday.  Labor Day celebrates the social and economic contributions of workers.  This day is often associated with parades, food and the end of summer.  Labor Day also marks the beginning of the NFL and college football seasons – YAY!.

So this day, enjoy your cookout.  Enjoy your family.  Celebrate your day and be safe my friends!

Paw Time with Houdini

 

This picture tells you absolutely everything you need to know about how hot it is here in the south of Georgia.  The heat index this week has been torturous.  Just moving it seems to make sweat and heat.  Even mom/dad says it is like living in a walk in sauna.  There are *those* peeps that say don’t complain because winter will be here soon.  Then there are *those* peeps like my mom/dad who absolutely love the winter.  Not the ice, snow close down school/businesses cold but the 60’s or 50’s temps outside.  Now that is weather my mom/dad LOVE.  As they peeps say, you can always put on clothes to stay warm but you can’t keep taking off clothes to get cool.  Well you could but dad said you might get arrested outdoors.  Hilarious huh?  Speaking of dad, now I leave you with Jokes with Daddy.  Hope you have a great weekend sweet friends ❤

Sunday, July 9, 2017 –  For the most part, I’m over this summer cold.  But this hacking cough still persists.  At times its like I’m trying to cough up a furball.  This cough has to go.  I wonder if I can sweat it out?  Miles Moved: 1.67

Monday, July 10, 2017 –  I’m going to have to find a solution to this heat outside.  It is way too hot to be walking outdoors in the heat.  Diablo my treadmill has gotten some workout but I just can’t seem to get into the groove of things with my chest and this cough. Miles Moved: 1.82

Tuesday, July 11, 2017 –  Moved a bit more today.  I put a call into my doctor and who said that something is going around with this hacking cough.  The only thing she knows to get rid of it is cough syrup with codeine.  I’m picking it up after work.  I really hope that works. Miles Moved: 2.57

Wednesday, July 12, 2017 –  I’m feeling so much better this morning!  The doctor told me to take it easy for a couple of days and to take my cough syrup.  Hopefully by next week I can be back into the swing of things all the around.  I hope anyway!   Miles Moved: 1.78

Thursday, July 13, 2017 –  Arrgh – this summer cold is killing me.  At times I have absolutely no appetite and the smell of food makes me sick – yay.  Then there are times that my stomach won’t stop growling.  Then my voice goes and then comes back hoarse as all get out – which I think the family enjoys – LOL.  I have no energy.  My energy got up and left without me it seems.  I’m taking it easy the rest of this week to see if I can’t shake it off.  Miles Moved: 1.07

Friday, July 14, 2017 –  I definitely am not filling my Apple i-Watch rings today.  My chest feels heavy (more than normal – giggles) and the codeine cough syrup is making me sluggish like I’m drunk.  It’s so weird.  But my cough is going away.  Cough or sluggo – which one should I pick, right?   Miles Moved: 1.23

Saturday, July 15, 2017 –  Today’s goals – get REST.  And that my friends is basically what I did all day.  Please make this crappy cold go away and find another home.  Karma where are you?  Miles Moved: 0.62


Thoughts for the week:  Life is not a race.  Sometimes we have to take a breath and be okay with yourself.  I’m sick.  I must take care of myself and get over this.  If I can’t take care of myself, I can’t take care of the family.  So I shall put myself first this weekend and come back strong on Monday.
