National Corn Chip Day

Today is mandated as National Corn Chip Day! Corn chips are right up my alley if you know what I mean. Who can turn down a good chip? Can you believe that 50 years ago (way before this journalists time), few Americans even knew what corn chips were? That’s amazing to me. Today, we can’t imagine life without those tasty little morsels. They were first marketed in 1961 and have been going strong since.

So, in honor of today being National Corn Chip Day – go out and eat some chips… with salsa… with dip… plain… with a friend… yeah, I know the pig is going to get his share!

Travels in the South

They say that breakfast is the most important meal of the day and I agree.  Mom has fixed me omelettes for breakfast and dinner.  However, I’ve never had an omelette like this one before.  It seems mom likes something called a Colorado Omelette.  It has all kinds of wonderful yummy stuff in it – some things I can’t mention because well I’m an oinker and it wouldn’t be good for me so I’m letting mom take it from here.

For obvious reasons – this omelette is loaded.  Loaded with goodness that is.  It has bacon, sausage, shredded beef, ham, onions, green peppers, mushrooms and cheddar cheese.  And let’s not forget to top off that deliciously wonderful omelette with salsa.  Yum.  Have you ever had an omelette topped with salsa?  It just brings so much more to the table.

January 29th is mandated as National Corn Chip Day! Corn chips are right up my alley if you know what I mean. Who can turn down a good chip? Can you believe that 50 years ago (way before this journalists time), few Americans even knew what corn chips were? That’s amazing to me. Today, we can’t imagine life without those tasty little morsels. They were first marketed in 1961 and have been going strong since.

So, in honor of today being National Corn Chip Day – go out and eat some chips… with salsa… with dip… plain… with a friend… yeah, I know the pig is going to get his share!  I think I even heard his humans saying they were going to put corn chips in their chili for dinner tonight.  Now *that* does sound lip smacking good!

Travels in the South

Welcome my friends to another week of Travels in the South.  This week, mom/dad found this delicious appetizer at one of our local restaurants.  They are now hooked and want this ‘dip’ all of the time.  Trust me, it’s even good the next day IF you have leftovers.

The restaurant that mom/dad goes to calls this a white queso dip… of course mom/dad now call it that “wonderful awesome dip to be shared’.  I guess their name is too long for the menu – snorts with piggy laughter.  This dip has shredded Monterrey Jack cheese, house made pico-de-gallo, seasoned beef, chopped cilantro and crumbled queso fresco.  It is served with salsa on the side and hot tortilla chips.  And it’s served in a cute little southern small iron skillet.

Now are you licking your lips wanting some?
