Week of 02/04-02/10/2018 – Week 5
“Dear Journal – I had intentions of having a perfect week this week with all of my circles completed. It didn’t happen. Six days out of seven I’m taking and doing a high five to myself. Even God rested one day. I have to work out something I couldn’t do the rest of my life – not a quick fix. If I take one or two days off, good for me. I love my Apple i-Watch. It gets me up/going and reminds me to do such. However, it also brings out the OCD in me and being perfect. I have to find an equal balance.”
“Dear Journal – I broke down and found a pair of jeans that actually fit and didn’t seem like a family had moved out of them. So from a size 26 to now a size 22. And I actually bought my first ever button up shirt. I have *never* worn button up shirts for obvious reasons. With my breast size they way the were, button up shirts did not stay buttoned up. My shirts were a 3XL and now I’m down to 1XL. Small changes but it’s working this plan of mine. I keep on walking. Who knows what this summer will bring.”

Update on my Air Fryer. Let me introduce you to Elite – my air fryer. Fits nicely on the counter and has little suction cups to keep it stable. One of the meals we prepared this week was steak and waffle fries – both done in the air fryer. The steaks came out awesome. We cooked two this size at one time around 5 minutes. Next time, I will take the time down a bit for more our liking. The waffle fries cooked 4 minutes and came out perfect! They were crunchy and awesome!!

Sometimes you just need a little comfort food. You know something warm to your belly and tasty… don’t forget tasty. A couple of weeks ago, mom was craving some comfort food just like this. So her and daddy went to a local pub that has what mom calls the *best* grilled cheese sandwich evah. Why do you ask is it the best? This is what it has on it: American cheese, cheddar cheese and pimento cheese… and mom added gulps bacon to it with a side of crispy french fries. Hey I can overlook the bacon when it brings a smile to mom’s face like this lunch did. Have you ever had something so cheesy and good?

Last week, I did a blog posting on Facts about Moi. If you missed it, please go and take a look. These were some of the things that people have asked mom/dad over the years. Today, I wanted mom to write a blog posting about some facts about me. I hope you find it interesting – take it away mom.

Having a pig is awesome. But there are some cons and pros about having any kind of animal under your care. We like to say that Bacon owns us and not we own a pig. Trust me, that’s how it works here at the Hotel Thompson and we wouldn’t have it any other way.
Pros: Pigs have a great sense of time. In all the years Bacon has lived here, I do not need to set my alarm clock. Bacon knows exactly what time to get me up in the mornings for breakfast. His timing is so good, that he even lets us sleep in a little on the weekend. He is the best sous chef I have ever had. When I cook dinner at night, he often comes into the kitchen and sits on the floor waiting to help. Help with what you ask? Well, peeling potatoes for one. He absolutely LOVES to eat the part I peel. Salad making is another one – the boy loves his lettuce, cucumbers and tomatoes. And cabbage – oh my! Every since I was kid, I love to chew on the core of the cabbage. Now Bacon loves it too. Bacon gives so much love – he’s warm – he’s sweet and we both love to snuggle on the sofa together at the end of a very hard day and watch some television. That’s another thing – he loves his shows on television. He knows key words like sit, bedtime, snuggle, kitchen, dinner, breakfast, go to your room. He’s very smart and it shows. AND he is very protective of me. If he doesn’t know you, he will get in between you and me and stand guard. If you get closer to me, he will even snort at you. I call him my protect pig.
Cons: He is pig-headed. Now you know where that phrase comes from. When he wants something, he wants it yesterday. He can put those breaks on and he will not move. If he wants something, he will put his head down and torpedo his way to what he wants. He is very strong and has knocked me down a couple of times. Of course, he tries to make up for afterwards. He *hates* to be ignored. That is the worse thing that you can do to my sweet guy. You can not board a pig here in our area. So you have to arrange for a sitter in advance. And then you worry are they taking care of him like I would. He loves his schedule too and we feed him three times a day. My husband tells me that I cook for him more than him – LOL. He eats piggy chow but he also eats plenty of salads, omelets and from time to time piggy pancakes.

Supposedly in the postal world – you can mail an actual potato. I guess with enough stamps, you can mail anything. But this intrigues me. Can you really mail a potato? I ❤ potatoes. Of any kind. Of any size. Of any nationality.
Now with that being said, who wants to take a challenge and mail me a potato? Do you really think it will work? Anyone – anyone at all?

As you read here, Tuesday, 07/29/2014, was National Chicken Wing Day. A local restaurant here called Hooters on Tara was having a special on all you can eat chicken wings that day. Mommy promised to take daddy so he could show them what he has – snorts. First off let me throw some shout outs to Keisha who was our waitress (you were AWESOME!) and to Mike the manager. Mike has helped us out here on my blog in the past when Rockelle and Benedict went on a date a while back. Mike’s awesome!

So when mom got off of the worky place, she rushed home in Albert and picked up daddy. Daddy in preparation had walked 2 miles and had a ‘light breakfast’. He had his game face on and was ready. Mom picked him up and off they went to the Hooters on Tara.
I was able to get these pictures all off of mom’s iPhone. Be prepared to be astonished my dear friends.
One of dad’s favorite things in the world are tater tots. And just fortunately mom had a coupon for a free appetizer at Hooters – thanks Hooters – so they got this amazing tater tot appetizer to the right. Doesn’t it look amazing!? That’s tater tots covered with gooey cheese, onions, sour cream and bacon. Daddy didn’t tell me about that bacon until I saw this picture. Tsk-tsk bad daddy!
Then the fun started. They would bring you 10 wings at a time – whatever flavor you wanted. These are pictures of dad’s platters. Picture to the left – medium breaded. They have just a little zip to them as far as heat when you eat them. Picture in the middle – Cajun breaded. They have a zip of a different kind. This zip is from the Cajun spices and are probably dad’s favorites. Then the picture to the right – BBQ breaded. These are M.E.S.S.Y. I don’t care how many wet wipes or napkins you have to clean up with, you are going to be wearing these. In fact, dad jumped in and wouldn’t wipe down until he was finished with these. Mommy said that at one point, she thought she was going to have to take him out front and hose him down – snorts.


So you’re calculating to yourself thinking well played daddy – he had 30 wings. You would be wrong my friends. Mommy couldn’t finish one of her plates. She had 13 – daddy called her a wussy. I’m not sure what that means. That left 7 off of mom’s plate though and dad ate them. I told you watch out Joey Chestnut! Drum roll please – dad ate 37 wings! 57.14% of you voted on Tuesday saying that daddy would eat more than 21 – you were right!

So you would think that’s the end of the story. Daddy ate to his heart’s content and put away 37 chicken wings. Nope. I gotta add my two cents now – snorts. Daddy was miserable. Can you say Tums and Pepto Bismol? Those were his two close friends when he got back to the Hotel Thompson. Can you say multiple trips to the facilities here all.night.long? Snorts – I think he finally admitted it to mom last night – he’s not as young as he once was. Mom and dad both are eating so light today it’s not funny. I think they are calling for salads all around for dinner for the rest of the week. In fact, when daddy got up this morning he told mommy, “I’m surprise I haven’t coughed feathers or squawked like a chicken”. Snorts – silly daddy!
But don’t worry my friends. I think dad is entering an all you can eat biscuits and gravy competition this weekend – snorts.
