This month we are highlighting easy dinner ideas for the summer months. Summer months are way too hot to be cooking in the kitchen making the house even hotter.
During these months, mom likes to go for ‘light’ foods that really don’t require a lot of cooking. When mom/dad went to Chicago in May, my Aunt Tina got this salad in the picture below at Richard Walker’s Pancake House. Mom was so amazed about the beauty of it and knew that she could do the same when she got home and she did! So although this picture is not one of hers, she replicated it perfectly and has many times in the past couple of weeks. It’s very feeling and I know that first hoof because mom has fixed me some too. I’m a lucky pig, right? So without further ado, mom will give you the breakdown below. Enjoy my friends… I know I do!
Grilled or shredded chicken. I buy a rotisserie chicken at our local Sam’s Warehouse on Sundays. It costs $5.00 and I break it up into three different meals for two people each. Part of the shredded chicken goes into this this salad. Breaking it into three different meals makes it cost $1.67 for two people on this salad.
A head of lettuce costs $0.99 and again breaks it up into three different meals. That makes this part $0.33 for two people on this salad.
Shredded cheese. I buy medium block cheese and got a block on special for $0.99 a block. It’s really hard to ‘cost’ how much it would be for this salad. I use it on a lot of different things and shred some for this salad. I’m going to assume I cut the cheese block up into four sections. With that being said, this part in the salad would be $0.25 for two people.
Boiled egg. A dozen eggs cost me $1.29. If I know we will be doing several salads in the week, I will go ahead and boil 6 of them at a time. That way I’m ahead of the game. Two eggs (for two people) for this salad cost $0.11,
Avocado. I love slice avocado but the hub doesn’t. I buy one avocado and split it into two meals. Avocados were on sale for $1.00 so the salad part is $0.50.
Tomatoes. I bought six medium sized Roma tomatoes at the market for $1.39 – that’s $0.24 per tomato and we use one per meal for two people.
Broccoli – a head of broccoli was $1.59. Again, we break it up into many different snacks/meals. It probably ranged $0.40 per meal for two people.
Dressing for the salad – the hub uses 1000 Island and I use Italian. We pay $1.50 per bottle and it breaks down to about $0.25 per salad for two people.
Now the fun part – putting the salad together. The only thing I didn’t put in the salad was shredded carrots. Jim is not a huge fan so we left them out. To build the ‘salad’, we put shredded lettuce on the bottom. And when you do this, I make sure all of it is ‘bite sized’. I hate it when you order a salad in a restaurant and you have to use a knife to cut it up because everything is cut too big. Don’t you? After the lettuce, I then place the items above on top like the picture. I add the salad dressing and then toss to get everything coated with the dressing. Then it’s time to jump into that delicious salad and enjoy. Final cost $3.64 for two people.
Shopping around the World will be hosted on Friday, June 29th. This month we will be highlighting easy dinner ideas for the summer months. Summer brings heat and who wants to be in the kitchen cooking, right? So this month, let’s concentrate on what you prepare for dinner in the summer months.

Welcome my friends. I’m tweaking my weekly journey with my healthier living. It’s a step in the right direction for sure. I hope you come along for the ride. Instead of day-to-day comments, I’m going to post something from my personal journal to share. Hope you enjoy. Remember all of us go down this path and we are all in it together ❤
Week of 06/10-06/16/2018 – Week 23
“Dear Journal – Baby steps. I’ve been tweaking dinner options this week. There really are some amazing foods that you can prepare that are totally tasty and the hub unit loves. Planning is the key though. I’m trying to do my cooking prep on Sundays for the week. Then during the week, I pull from already cooked ingredients in the fridge. It saves time and getting the house hot from actually cooking the first time. What a time saver this is! I can’t believe I haven’t tried this earlier. But like they say, better late than never!”

And the itsy bitsy spider climbed up the spout again
Kind of a catchy tune isn’t it? Mom went outside to get the mail. When she came back in, she was mumbling something, grabbed her cell phone and went back outside. This piqued my interest. What the heck was mom up to?
When she came back in, I could smell nature on her. And, I could smell the heat. Shivers, I don’t like the heat. I’ll take my air conditioned room any day. 🙂
Well, she said she went outside to take a picture of something. Of course, I had to jump on the couch with her to look at the picture. Oh THUD! I will never hear the itsy bitsy song again without this vision popping into my little head. If *that* is an itsy bitsy spider, we are ALL in trouble my friends. This thing looked like it had its own zipcode! Have you ever soon anything this huge??!!
I recognize that sound of you hitting the floor. I’m sorry. But you have to admit that it is very colorful. Mom says it’s a good spider and won’t harm you. I’m not sure about that. It looks like it can carry me off.
Hello sweet friends. Welcome to another edition of Shopping Around the World. This month we are highlighting things that we cook in this hot weather outside. So without further ado, here is mom – take it away mom!
What we have this month is a meal that keeps on giving – LOL. Friday morning before work, I put a beef roast in the oven. I got a nice beef roast (around 3 pounds) at the market for around $14.00. That night when I got home, I cut all of the meat up and put it aside. In the meantime, I took a head of lettuce ($0.98 head) and chopped it all up placing it in a huge bowl. On this date, I didn’t add anything extra – just the salad mix so far. I then poured in some 1000 Island salad dressing into the lettuce (probably 1/3 bottle for the entire salad $0.34). I tossed and coated all of the salad with the dressing. At this time, you can add a little more if you need it. Just make sure your lettuce is coated.
I then used some big plates and put some salad into the plates. Next up, the beef that I had previously sliced was put on top of the salad. Just as a garnish, I took some barbeque sauce I had on hand and drizzled it over the beef. There you go – dinner is served. The entire meal cost $15.32 and we had salads for two all weekend in this heat.
This picture tells you absolutely everything you need to know about how hot it is here in the south of Georgia. The heat index this week has been torturous. Just moving it seems to make sweat and heat. Even mom/dad says it is like living in a walk in sauna. There are *those* peeps that say don’t complain because winter will be here soon. Then there are *those* peeps like my mom/dad who absolutely love the winter. Not the ice, snow close down school/businesses cold but the 60’s or 50’s temps outside. Now that is weather my mom/dad LOVE. As they peeps say, you can always put on clothes to stay warm but you can’t keep taking off clothes to get cool. Well you could but dad said you might get arrested outdoors. Hilarious huh? Speaking of dad, now I leave you with Jokes with Daddy. Hope you have a great weekend sweet friends ❤
Dear Bacon – Summer really stinks. It’s totally hot and uncomfortable. All I can do is stand in front of the fan and let the breeze overtake me. I just have to do something to cool me down. Signed Flappy
Dear Flappy – Hey pal, whatever you need to do to keep you cool I say go for it! Momma is a firm believer in her fan in this hot summer. Can’t we just skip over that season? I’m all for it. Let’s start a petition. What do you think?
Dear Bacon – Hubba hubba little man. I find you so fascinating. I can’t believe a pig like you is still single. What do you say we fix that problem? Signed I Do
Dear I Do Don’t – Not that I’m totally not appreciative or anything but I’m just not ready to settle down like that. You’re totally beautiful and I think you will find the perfect pig one day. Don’t give up my friend.
Dear Bacon – You talk about that Houdini at the Hotel Thompson a lot of different times. I just want you to know that I think I’m more spoiled than he is. My humans actually dress me up too. It’s a pain in the rump area but hey it makes them laugh. You ever think about dressing up? Signed Prissy
Dear Prissy – First off – you look adorable in your little outfit. Your face doesn’t *look* like you’re enjoying it but hey if the humans are happy, right? Second off – Houdini is a fussy little character. He is strictly a mommy’s boy and I just don’t see him letting me ‘dress’ him. I on the other hand let mom dress me up from time to time. Like you said, it makes the humans happy and smile. That’s our jobs!
Dear Bacon – Have you ever heard of the Red Hat Society? I’m a member and they have monthly meetings. I think you need to look it up in your area and do a posting on it. I think it would be fascinating. Signed Fun Times
Dear Fun Times – I’ll do that! I’ve heard mom talk about it with her friends. There’s also purple hats, right? 🙂 See, I do pay attention even though sometimes mom doesn’t think so. You wear that hat with pride and look forward to a posting in the future my friend.
Barks! Happy Friday friends. Hope you have been having an awesome week so far. It’s down hill from here – I can see the light of the weekend. Hopefully this weekend I can rest and relax with mom. Last weekend, I went for my yearly wellness check. This is me and my doc, Dr. Waggoner. He’s a pretty cool guy for sure. He said I was in good health and my weight was great – isn’t that what we all want to hear? In fact, my weight was actually down a little from last year. Dad was worried because someone has been giving a few extra treats here/there. So no worries daddy – bring me some more treats – barks!
Mom said I was her sweet little trooper today. I got three shots and not one single time did I whimper or cry. See, I was a big boy ❤ And I don’t have to go back for another year – now *that* is awesome.
Now, I leave you with Jokes with Daddy – I know you can’t wait for that. Have a great weekend dear friends.
Barks! Oh friends – how was your week? Mine was just barky wonderful! I want to show you a new toy that I got last weekend during the great Snowmageddon here in the south. It’s a Bark’s Woof Beer bottle. It’s made of hard plastic and has a squeaky toy in the bottom part of the bottle. It’s the cutest thing and mom/dad fell in love with it when they saw it in the store. They just knew I would love it – don’t you?
They brought it home and gave it to me. Oh my doggy heavens! You should have seen me dragging it around the Hotel Thompson, squeaking and playing with it. It was a blast! Mom took this picture of me on the couch. I actually fell asleep with the bottle in my mouth. Mom said I couldn’t hold my woof beer. Barks with piggy laughter!
Miniature pot bellied pig and friends - Bacon, Houdini, Hemi and all of the Rock Clan with Journalist Rocky the Squirrel all out looking for adventures from the Hotel Thompson.
