National Pancake Day

Today, March 4, is a most wonderful and tantalizing day.  Today is National Pancake Day.  Do I hear you cheering on that holiday?  I know Bacon’s daddy can’t wait to hit the nearest IHOP Restaurant today for some FREE pancakes.  Did I mention FREE?  Yep, you can enjoy a FREE short stack of buttermilk pancakes today on National Pancake Day in exchange for a donation to the Children’s Miracle Network.  That sounds like an awesome deal.  FREE pancakes and you are helping out a wonderful cause.

Do you know who else likes pancakes?  Yep, you guessed it.  That little oinker I refer to as my buddy, Bacon.  In fact, Bacon’s mom has a little skillet made just for that spoiled little pig.  When you pop out his pancakes, they look like a little pigs face.  When the Hotel Thompson has pancake weekend, you can always find Bacon dining on one as well.

Let’s also think about my friend Lilly here in this picture.  She’s not much for eating pancakes but she loves to wear them as hats.  I guess that’s why her parents sometimes call her Lillycake – chitter chatter.

However you like your pancakes – be sure to enjoy some today on this National Pancake Day holiday!

National Sandwich Day

Friends – this is an awesome day – National Sandwich Day!  Sandwiches are so varied in how you can make them – what bread, what meats, hot or cold, grilled, pressed, open or closed, condiments, toppings – sigh – let me slow down.  The options are out there my friends.  Do you know how the day got started?

English history says that John Montagu was the 4th Earl of Sandwich.  He was a heavy gambler and would spend hours at the tables in London’s gambling halls.  In 1762, he created the sandwich by putting meat between two pieces of bread.  This allowed him to stay at the tables longer to gamble.  Thus, the sandwich was made.

And do you know what Elvis Presley liked on his sandwiches?  Peanut butter, banana and bacon (sorry Bacon) and then it was grilled.  It does sound interesting in a round about way.

And do you have a Subway restaurant in your area?  Today if you buy a sub and a 30 ounce drink, you get a free sub to share.  Now that sounds like an awesome way to spend today.

Travels in the South

Doesn’t that look delicious?  A couple of weeks back mom/dad were craving pizza which is unusual.  Well not for dad.  He’s always craving pizza of any sort.  But mom, she never craves pizza.  So when she does, dad takes full advantage of the situation.  So today I’m going to let daddy finish this Travels with the South.

When the wifey craves pizza, I know exactly where to head to make us both happy.  There is a local pizza joint that has stuffed crust pizza.  The wife loves stuffed crust – all of that extra cheese in the crust of the pizza.  It somehow makes eating pizza seem so much more of a delightful experience.  This day I even went one step further for my honey.  This pizza place also offers seasoned crusts.  So today I got stuffed crust with a pretzel crust.  Can you say yum because that’s exactly what we both said… almost at the same time.

And we know that I’m a meat eater so I added my favorite toppings:  pepperoni, italian sausage, ham, bacon, beef and black olives.  I have to admit that this pizza came out amazing!  Even the waitstaff was drooling.

Travels in the South

Everyone should have that one great Mexican restaurant that they always have on their ‘go to’ list when nothing else sounds good for dinner.  You know what I mean.  There is always the constant, “Where do you want to eat”, conversation going on here at the Hotel Thompson.  It’s daily and it always ends with, “It doesn’t matter.  Whatever you want.”  I piggy swear that sometimes they need to write all of the local restaurants down on pieces of paper, fold them and put them in a box.  When these nights come up about where do you want to eat, randomly pick a piece of paper out of said box – problem solved.

This was one of those nights where mom/dad just automatically skipped the conversation and went straight to their stand by of Mexican food.  It’s a no brainer.  They don’t even have to decide what to order because they always get the same thing and split the meal.  What is it you ask?

This wonderful meal is called Tacos De Alambre.  It’s made with flour tortillas, grilled steak, onions and bell peppers.  Mom also gets her Tacos De Alambre topped with Chihuahua cheese.  This is a great Mexican melty yummy cheese.  Can you say delicious?

Travels in the South

Have you ever tasted something that was so wrong but yet so rightfully delicious?  Mom was just so glad that she got daddy to eat his vegetables.  What vegetables you ask?  Well, we are here in the south where if you stay in one place for too long, they will deep fry you.  Okay maybe not you personally but anything food wise.

At this particular restaurant, they have breaded deep fried crispy green beans.  You heard that right.  Deep fried green beans.  They serve these magnificent veggies with a cucumber wasabi ranch sauce.  You get a little spice with a little veggie with a little breaded goodness.  Have you ever tried fried green beans?

Travels in the South

They say that breakfast is the most important meal of the day and I agree.  Mom has fixed me omelettes for breakfast and dinner.  However, I’ve never had an omelette like this one before.  It seems mom likes something called a Colorado Omelette.  It has all kinds of wonderful yummy stuff in it – some things I can’t mention because well I’m an oinker and it wouldn’t be good for me so I’m letting mom take it from here.

For obvious reasons – this omelette is loaded.  Loaded with goodness that is.  It has bacon, sausage, shredded beef, ham, onions, green peppers, mushrooms and cheddar cheese.  And let’s not forget to top off that deliciously wonderful omelette with salsa.  Yum.  Have you ever had an omelette topped with salsa?  It just brings so much more to the table.

Travels in the South

Welcome my friends to another week of Travels in the South.  This week, we are talking about my dad again.  He gives me so much material – snorts and rolls with piggy laughter.  Dad loves finger foods and peanut butter and food and pretzels and food.  Well you get the ideal – daddy loves food.  And who could blame him, right?  I myself LOVE food of any kind in any way.

Well mom went shopping the other day and found these awesome treats for him – an entire container of peanut buttered pretzels for $1.00 – what a bargain!  Now you would think with the price low they might be stale or icky.  They were not.  Daddy ate them grinning the entire time making weird noises.  I think he liked them.

Travels in the South

Hello sweet friends – welcome to this week’s Travels in the South.  Have you ever heard of macaroni cheese balls?

I had not either… well that is until I found some cool pictures on mom’s i-Phone the other night.  She had some interesting pictures and a lot of explaining to do for sure.

Mom and dad went to a local steakhouse and these delights were appetizers.  These wonderful balls are of course made with macaroni and then they add some fabulous cheeses – asiago, mozzarella and parmesan cheese.

They roll them in breadcrumbs and then deep fry them for a very short time. They are so cheesey as you can see from dad’s picture.

The restaurant serves the macaroni cheese bits with housemade ranch dressing.  Of course dad liked them plain straight up without any additional sauces.  He says they hold their own and are awesome all by themselves.

Travels in the South

Oh my friends.  This week daddy said he died and went to heaven.  I don’t think he actually died and went to heaven but he had that look on his face like he was somewhere far, far away from all of us here at the Hotel Thompson.  Heck, I think he was even smiling.  It was a strange time for sure.

You see there’s two things that dad really loves.  One is Utz potato chips.  Have you ever had any of them before?  Delicious.  And I can say that first hoof because he has shared with me when he’s had his Utz chips.  Nice of him huh?  The second thing he loves is Butterfingers.  That’s the top of his all time love of chocolate.  Now these days, he doesn’t get much of either one.  Cause you know he and mom are trying to be healthier.

But mom found something that she just knew daddy would – how did she say this?  Have kittens over.  Which was weird because I still haven’t see any kittens.

But here you go, two of dad’s favorites rolled up in one delicious combination.  Daddy says if you see them in a store near you, don’t just buy ‘a’ bag.  Buy a dozen or more.  Yes, you will thank him later – snorts with piggy laughter.

Travels in the South

Welcome my friends to another week of Travels in the South.  This week, mom/dad found something delicious and decadent.  Something they had to share because you know sharing is half of the calories, right?

Now, I won’t tell anyone you were drooling while you were looking at that picture.  Nope.  That will just be our little secret.  Are you wondering what it is?   This is a white creamy cheesecake on a graham cracker crust swirled with white chocolate curls topped with fresh strawberries and whip cream.  THUD!  That would be my little piggy mouth hitting the floor.  It sounds marvelous but mom/dad said it tasted even better.  It was sweet but no so that your teeth ached afterwards.  The cost was less than $5.00 and mom/dad said it was more than enough – even for two people.  Who can turn down a good cheesecake?  In fact, where is mine.  Oh mom/dad….
