Welcome my friends. I’m tweaking my weekly journey with my healthier living. It’s a step in the right direction for sure. I hope you come along for the ride. Instead of day-to-day comments, I’m going to post something from my personal journal to share. Hope you enjoy. Remember all of us go down this path and we are all in it together ❤

Week of 07/22-07/28/2018 – Week 29
“Dear Journal – Life is good. The number on the scale is finally catching up – YAY! You go for so long without that stupid number moving and then all of a sudden it plays catch up in the right direction. Time and patience – neither one of which I have at times. But I’m learning. Live life fully is my motto these days – no regrets. Learn and grow.”

Week of 05/13-05/19/2018 – Week 19
“Dear Journal – I think one of the biggest things about losing weight/eating healthier is getting your mindset in the right direction. If your mind is not there, it’s not going to happen regardless of how many times you attempt. Another for me is setting goals. If I have the mindset and a mini goal to get to, it’s a done thing. It’s the way I’m made just like others I’m sure. In saying that, I’m re-adjusting my life, getting things in line and hitting my plan effective June 1. Why am I putting it off until June 1? Why not start today? Well, we have vacation plans this week/next. I’m going to enjoy myself and then hit it hard with monthly goals. That is the plan. So my walking pace will be back in June – come hell or high water.”

Week of 04/22-04/28/2018 – Week 16
“Dear Journal – Do you remember the story about the tortoise and the rabbit? Slow and easy wins the race… if there was a race. Life is not a race. Life is an adventure of day at a time – living in the moment. That’s how we should live. You hear it all of the time, “Live today like there is no tomorrow. We are not promised tomorrow. Live today as if it was your last day.” But do we? All of those cliches really do mean something. Have fun in life. Laugh so hard that you pee on yourself. Drink a little too much. Tell people you love them. Give someone a hug – you never know when they need it. Life doesn’t stop when you go to bed tonight. It just recharges you for a new and fresher tomorrow to do it all over again.”

Week of 04/08-04/14/2018 – Week 14
“Dear Journal – It feels good to finally move a little bit more..not giant steps but a bit more. I’m taking advantage of the good days. The bad days I’m trying to be nice to myself. Trying to live in the moment and tossing worries over my shoulder. Living for the moment sounds so easy and we all attempt it. But do we really live for the up-most potential in those words? I’m trying and you know what? I feel better – less worries, less stress. Be happy. I recently saw a sign that I bought for my office. It reads, “Bloom where you are planted”. I think that tells us a lot in our lives. Don’t you? Of course… life wouldn’t be perfect without having my new sign right near my old reliable sign of “Martha Stewart doesn’t live here.” LOL – Hey, I didn’t say I was perfect.”

Week of 04/01-04/07/2018 – Week 13
“Dear Journal – Sometimes when you let some things go, everything falls into place. Today is a new day to a new beginning. My recuperation from surgery has lasted a bit longer than I expected. I didn’t think I was going to jump back into things right off but I also didn’t think it was going to take me nearly five months to get there either. But it’s time. Baby steps – even if it is an mile a week. It’s time to start pushing myself for more of an achievement. If my sister can run 26 miles in October, I can walk 10-12 miles a week. No excuses.”

Another one with the air fryer last week. The hub unit loves corn dogs and requested them in the air fryer. This took a day ahead to prepare. I’m sure I could have done it in one day but I wanted the corn dogs to be a little frozen… let me start at the beginning. One night after dinner, I fixed corn dog batter and battered my hot dogs. I put them in a container into the freezer. I want them to be a little ‘hardened’ so as to not get the batter slushed all around in the air fryer. Makes sense, right? The next night when we were going to have the corn dogs, I took them straight from the freezer and popped them into the air fryer with tater tots (my hubs favorite). I cooked the both of them at the same time at 350 degrees for 20 minutes. They came out perfect! The hub enjoyed them immensely and I didn’t feel so guilty about it because they were not full of grease. So another hit at the Hotel Thompson!

Week of 03/04-03/10/2018 – Week 9
“Dear Journal – Stress should be one of those dirty words that we don’t mention. Stress is ugly and mean. Stress is butting into my life lately. The I can’t sleep, I’m running 90 miles per minute in every direction and feel the world is catching up with me kind of stress. I need to take six classes for work for updating my accounting skills. Something added in to a 24 hour day that now needs 36 hours just to get everything done. As of today, five classes down – one more to fit in this week. The month is getting away from me as well. I just rolled February at work and now we are halfway through March and I haven’t started March. I need two of me I think for work. Mom is going to the pulmonary specialist today to see how bad her COPD is… shaking my head. Just add to the stress – parents need to live forever. I’m not ready for anything of that nature. Enough of my downs – let’s talk ups. I have maintained my surgery weight – that’s awesome and a positive note. I am trying to walk when I can in between flare-ups. Flare-ups is also another bad word but right now I’ve got them beat. I’m staying on top of them. And I’m eating better. Hey – the good with the bad huh?”

Look my friends – one day last week I used the air fryer to make boneless buffalo chicken nuggets. They came out amazing! The hub unit could not get enough of them. They were seasoned and breaded just right. See how crispy they look. And trust me, they tasted just as crispy – had the perfect crunch. I didn’t take a picture of them but I also fixed tater tots. They probably could have went a few minutes more but they were awesome!!

Week of 02/18-02/24/2018 – Week 7
“Dear Journal – It seems like food choices are beginning to become easier in decision making. That’s a great and awesome thing. If you would have told me this time last year I would be choosing water over a soda, I would have laughed at you. I was so addicted to fully leaded soda! It’s such a relief to break myself of that addiction. I don’t have to worry about diet soda… I would much rather drink water anytime. And I think water is so much better for my skin as well. This was definitely a good week of eating. I need to pick up the exercise a bit more. I’ve been doing a combination of walking and exercise. There are seven exercises that I’m trying to incorporate into my routine everyday. It’s working for me and that is what matters. I think I’m going to rope the hub unit in doing those seven exercises with me every evening. It may make things go faster and it would certainly help to boost both of us for sure.”

Week of 02/11-02/17/2018 – Week 6
“Dear Journal – Sometimes I think we beat ourselves up too much. There is a line between challenging yourself to do better and pushing yourself over the edge. If I push myself too much, it becomes something I *have* to do, a chore if you will, and my OCD gets tested. If I leave it at the pace I’m going, I can fit it into my life where it becomes a habit in the end and not so much as a chore. Shaking my head. Life is full of complications – LOL. But so far, I think I have this right now. I do want to pick up the pace a bit more. Now I’m trying to turn a 24 hour day into 36 hours. Do I really need sleep? Just joking – I love my sleep. It’s hard to believe how things these days in the form of moving around is so much easier. I’m so grateful that I had breast surgery. I think I need to send the doctor a thank you note.”

Okay my friends – another week with using the air fryer at the Hotel Thompson. One of my biggest weaknesses foodwise is fried chicken. It might be a southern thing. It’s a huge comfort food here in the south. And it’s something I was never able to work around with trying to lose weight but yet keeping my favorite food in the mix. Who needs all of that grease that it’s deep fried in, right?
Well, I think I found my heaven. Let me present to you Exhibit A – fried chicken (skinless and boneless) that was prepared in air fryer. I put it on on the white napkins straight from the air fryer so that you could see – absolutely NO GREASE. Look at the crispy outside and the inside was so juicy. Better yet, I’ve found with the air fryer that you actually taste your food and not the grease that it is cooked in. I seasoned my chicken before hand with salt/pepper and some pepper flakes. I then dipped it in a seasoned egg mixture and then dipped it in a seasoned flour mix. I then put the chicken in my air fryer. The basket held five chicken thighs at one time. I set the timer for 20 minutes on chicken at 380 degrees. At 10 minutes, I stopped the timer and turned the chicken. It came out this beautiful. It was a HUGE hit here at the Hotel Thompson.

Friends – mine and Houdini’s journal is back up and running again. What? You didn’t know it was down because you haven’t been visiting? No way!
You can check out our journal here or by clicking on the link to the right of my blog titled Journal of Bacon and Houdini. Our journal is about the behind the scenes of our life here at the Hotel Thompson. Our humans don’t read it because well… that would be an invasion of privacy, right? So we talk about everything there – everything!
We hope that you enjoy it and leave us messages about what you think. You never know what we will be discussing 🙂

My mommy seems to finally be back in the groove of things. That makes this little piggy so happy that I finally got her trained. She feeds me dinner when she gets home from that work place and let’s me play. I like it when mommy stays with me while I eat. Tonight she put my food dish down and then left. I followed her seeing where she was going. She got me fresh water and came back with me to eat. She’s a good mommy like that. We then got to play in the front room. She said I wore her out – snort. My plan worked, giggles.

Mouse Cat still wants nothing to do with me. She stays on the couch where I can’t get to her yet. I can almost jump on top of the couch but not yet. Hemi Cat continues to swat at me when I get near. Heck, I just want to play. Mom gets on to him for swatting me but she didn’t see me nip his tail -snort. He chases me up and down the hall and I chase him. When I run real hard on my piggy legs up and down the hall, I kind of bark. Mom thinks it’s cute but of course everything about me is cute, even my little windshield washer tail that wiggles when I’m happy.
Mommy fixed my snack tonight and I went into the kitchen and watched while she did it. Mmm, this little piglet loves some cheerios and chopped up apples. Mommy is so spoiling me!

More later friends. Oink oink out!
