Travels in the South

Hello sweet friends.  How was your Valentine’s Day yesterday?  In honor of the sweetest day of the year, mom/dad shared a little love yesterday as well.  They went out to dinner and afterwards enjoyed this delicious concoction.  And hey, splitting a dessert means half of the calories, right?  But who’s counting calories on Valentine’s Day – snorts.

This lovely creation is called a Margarita Cheesecake which is seasonal special at a local steakhouse called Logan’s Roadhouse.  Now, it’s like other cheesecakes made with cream cheese but it has Logan’s signature margarita blend on the graham cracker crust.  And don’t forget about the sliced strawberries all over the place.  Mom said it was – what was the phrase she used – delightful to the fullest!

So, if you are near a Logan’s Roadhouse, make sure you check it out for this wonderful dessert.  You won’t be disappointed.

Travels in the South

Welcome my friends to another issue of Travels in the South.  Today, I want to talk about biscuits, which I’m told look a lot like scones.  Maybe the difference is a little sweetness.  The majority of our American biscuits do not have sugar while scones have a bit.  But here in America in the south, we have found a biscuit that gives you a little of both – we at the Hotel Thompson call them biscones – snorts with piggy laughter.  Of course, that is not their real name.

Let me introduce you to a Boberry Biscuit from a local restaurant here called Bojangles.  Bojangles is known for their chicken (go figure with mom and her chicken passion, right?)  But they also have these sweet babies.  It’s a regular biscuit made with blueberries and then highlighted with cream cheese.  Can you say sinfully good?  You can buy them in packs of 1, 2 or 6.  Nana buys them 6 at a time and freezes them.  She shows great restraint while this piggy can’t say the same.  Yes they are that delicious.

It’s Time

It’s Time!  Well, it’s not the time but it’s getting closer.  You do know what I’m talking about my friends.  Fall or Autumn – whichever one you call it.  The one time of the year that my mom looks forward to.  You know, the beautiful colors, the pumpkins, the cooler weather, the changing of the leaves, the start of the holidays, the lighting of candles and fireplaces on a cool night, the snuggling during buggy rides on the farm.

STOP!  STOP!  STOP!  STOP!  STOP!

 Who am I trying to kid?  I’m sure Fall/Autumn means all of those things to some people.  But to mom, it means getting out the Ugg boots and trying Pumpkin everything.  You don’t believe me?  Look at the goodies she had this past weekend.  I’m sorry friends – it has started.  So if you see my mom wearing her Uggs with hands fully loaded of pumpkin stuff in the market, make sure you give her a hand okay.  Happy shopping!

Why I Gained Weight This Week

Okay I’m a big girl – okay not “BIG” girl but big in the way of I can admit failure from last week and not losing weight.  You see there was the Red Velvet Oreo cookies that I found in the store.  Red Velvet not being one of my favorite flavors but the hub unit’s favorite.  Of course I bought him a bag – what kind of wife would I be not too, right?

So I call him and tell him that I have something special for him that night.  Of course he is a guy with a one track mind so I have to tell him no not that – ha!  But something he will love more – something that is his favorite.

So I hurriedly rush home to give him his bag of Oreo’s.

img_6323So to heck with dinner.  Let’s open these bad boys up and try them.  That’s when we saw that the cookie part was the Red Velvet and the white part of the Oreo was the cream cheese.  We both grab one cookie – you know to test for taste.

At the same time we bit into our cookies.  That’s when we heard the angels sing.  Oh my heavens – these things are fantastic.  Not overly sweet but you can taste the Red Velvet and the cream cheese.  Yes we were hooked and – lowers head – no we didn’t stop at just one.  You can tell by looking at the size of my butt.  It is now the size of Texas.

And shakes head.  I would like to say that the madness stopped there but I would be lying.

Oh no.  That’s when I brought out exhibit 2 from my purchases earlier this day.  Chili Nut M&M’s.  Father, I have sinned.

Let me tell you something my friends.  If you see this in the store, buy them.  They freeze well… I’ve heard.  They are just like regular peanut M&M’s.  They taste wonderful…however, when you swallow you find a little heat coming your way.  Not so much that you run for cover to drink a gallon of milk but enough to say “Hey, welcome to the party.”

So you see my friends, I know why I didn’t lose weight this past week.  Admittance is the first thing, right?  Here’s to a better week this week.

Shopping Around the World

My friends – thank YOU so very much for everyone’s wonderful responses to my and Fozzie’s Shopping Around the World blog posts.  We are having so much fun seeing the different prices from around the world AND looking at some intriguing recipes and dinner suggestions.  They are so totally awesome!  Let’s keep up the great work – remember to link back to my blog here so we can keep up with who is playing and keep up with all of the recipes.

This month we focused on FIVE items of your choice in a dessert.  MMM – licking my piggy lips – this sounds so delicious already!  My mommy promised to make me and daddy one of her all time wonderful desserts – Easy Peanut Butter Pie.

   Now I know you are looking at this picture and going there’s six ingredients not five.  Bacon, can your mom count?  Yep, she can.  One is up to you.  Let’s break the items down first with prices:

Chocolate Graham Cracker Crust – $1.50; Jif Peanut Butter, smooth – $2.50; Lite Whip Cream – $1.00; Cream Cheese – $1.00; and Confectioner’s Sugar – $3.29; Reese’s Mini Cups – $.69= $9.98

Now you really can’t say this easy Peanut Butter Pie cost $10.00 to make because it didn’t.  You’re not going to use the entire jar of peanut butter or the entire bag of confectioner’s sugar.  With that in mind, I would guess perhaps around $5.00.  And the Reese’s Mini cups are optional.  Mom just thinks they look pretty decorated on the finished pie.  And yes she got the mini cups because the paper is already taken off of them – that’s right.  Mom goes for easy – easy to eat while decorating the pie that is – snorts.

  Directions from mom for Easy Peanut Butter Pie:

Make sure that the cream cheese and cool whip are at room temperature.  Mix the cream cheese (1 package), 1/2 cup confectioner’s sugar and 1/2 cup peanut butter until smooth.  Fold in 1/2 of the whipped topping.  Spoon the mixture onto the chocolate graham cracker crust.  You can use regular flavor graham cracker – the chocolate just kicks it up a bit.

Please the remaining whip cream topping over the pie.  Now we garnish with chopped up Reese’s peanut butter cups.  This is optional.  You can also drizzle with chocolate.  Chill for at least two hours or overnight.  Now, I would like to say that this picture is what mine looked like.  We made the pie.  Popped it in the fridge overnight and then after dinner the next night we had some friends over and ate the pie…. without taking a picture of it!  Of course, that could have given us an excuse to make another 🙂 winks.

A Special Birthday Shout Out –

Today is a most special day.  Today my little friend Cocco turns the BIG two years young.  Can you believe that?!  Time flies by so fast when you are having fun.  I gotta give my pal, my buddy, my little mini-me a special shout out.

You were one of the very first piggy friends I made when I started my blog so many years ago.  Little man, I look up to you.  You’re as cute today as you were back then.  Us little piggies have to watch each others back.

I hope today finds you full of your favorites – cream cheese, peanut butter and watermelon.  If we were closer, I would so throw you a surprise birthday party in my magical backyard inviting all of our anipals.  Love you my friend!!
