Week of 04/01-04/07/2018 – Week 13
“Dear Journal – Sometimes when you let some things go, everything falls into place. Today is a new day to a new beginning. My recuperation from surgery has lasted a bit longer than I expected. I didn’t think I was going to jump back into things right off but I also didn’t think it was going to take me nearly five months to get there either. But it’s time. Baby steps – even if it is an mile a week. It’s time to start pushing myself for more of an achievement. If my sister can run 26 miles in October, I can walk 10-12 miles a week. No excuses.”

Another one with the air fryer last week. The hub unit loves corn dogs and requested them in the air fryer. This took a day ahead to prepare. I’m sure I could have done it in one day but I wanted the corn dogs to be a little frozen… let me start at the beginning. One night after dinner, I fixed corn dog batter and battered my hot dogs. I put them in a container into the freezer. I want them to be a little ‘hardened’ so as to not get the batter slushed all around in the air fryer. Makes sense, right? The next night when we were going to have the corn dogs, I took them straight from the freezer and popped them into the air fryer with tater tots (my hubs favorite). I cooked the both of them at the same time at 350 degrees for 20 minutes. They came out perfect! The hub enjoyed them immensely and I didn’t feel so guilty about it because they were not full of grease. So another hit at the Hotel Thompson!

Week of 03/25-03/31/2018 – Week 12
“Dear Journal – each day is one day closer to a better me. Words to live by… honestly. Changes are made bit by bit until they become second nature. Then you throw in another change into the bit until there you go – you are exactly where you want to be. Baby steps. I’ve been so concerned about exercising more where I need to focus in more on completing my healing process. I never knew that my healing would take so long. So no more rushing to the finish line. Now, I heal one day at a time to get closer to the next step.”

Oh and friends – check this out. Last week the hub unit was begging for egg rolls and crab angels. So like a good wife – snorts – I fixed him some home made ones in the air fryer.
It was totally yum! It had crunch and was so wonderful. The hub unit said it was just as good as getting them at our local Chinese restaurant. The only thing missing was hot mustard!

Week of 03/11-03/17/2018 – Week 10
“Dear Journal – Do you ever feel like time is slipping away. You look in the mirror one day and you love your curly hair and your long legs. You look again and your hair is thinning and those once long giraffe legs now resemble a short buffalo? LOL – okay nothing that drastic but you get the meaning. Life is short. We talked about celebrities aging today… and then realized that we were also aging. We still act like kids young at heart while our bodies get older every day. What once we thought would never happen to us when our grandparents couldn’t get up as fast or walk as far has now hit us… no full force yet but knocking on the door for short visits. We say it all of the time – life is short. So what do we do? Live it up every.single.day as if it is the last. Because you never know – tomorrow is not a given 🙂 ”

This week the hub unit was craving homemade fried shrimp and his beloved tater tots. I use to limit these meals because of the deep frying and I still do. But, I wanted to see what the air fryer could do for my hub’s favorite meal. I bought fresh shrimp, deveined them and slightly pounded them giving them a ‘flat’ appearance. I then battered the shrimp with a light coating of egg mixture and seasoned flour. I placed them in the air fryer for 20 minutes at 400 degrees. Have way, I turned them and added the tater tots. They came out beautifully! Lightly tanned on the outside, crunchy and so juicy on the inside.

Week of 02/11-02/17/2018 – Week 6
“Dear Journal – Sometimes I think we beat ourselves up too much. There is a line between challenging yourself to do better and pushing yourself over the edge. If I push myself too much, it becomes something I *have* to do, a chore if you will, and my OCD gets tested. If I leave it at the pace I’m going, I can fit it into my life where it becomes a habit in the end and not so much as a chore. Shaking my head. Life is full of complications – LOL. But so far, I think I have this right now. I do want to pick up the pace a bit more. Now I’m trying to turn a 24 hour day into 36 hours. Do I really need sleep? Just joking – I love my sleep. It’s hard to believe how things these days in the form of moving around is so much easier. I’m so grateful that I had breast surgery. I think I need to send the doctor a thank you note.”

Okay my friends – another week with using the air fryer at the Hotel Thompson. One of my biggest weaknesses foodwise is fried chicken. It might be a southern thing. It’s a huge comfort food here in the south. And it’s something I was never able to work around with trying to lose weight but yet keeping my favorite food in the mix. Who needs all of that grease that it’s deep fried in, right?
Well, I think I found my heaven. Let me present to you Exhibit A – fried chicken (skinless and boneless) that was prepared in air fryer. I put it on on the white napkins straight from the air fryer so that you could see – absolutely NO GREASE. Look at the crispy outside and the inside was so juicy. Better yet, I’ve found with the air fryer that you actually taste your food and not the grease that it is cooked in. I seasoned my chicken before hand with salt/pepper and some pepper flakes. I then dipped it in a seasoned egg mixture and then dipped it in a seasoned flour mix. I then put the chicken in my air fryer. The basket held five chicken thighs at one time. I set the timer for 20 minutes on chicken at 380 degrees. At 10 minutes, I stopped the timer and turned the chicken. It came out this beautiful. It was a HUGE hit here at the Hotel Thompson.

Week of 02/04-02/10/2018 – Week 5
“Dear Journal – I had intentions of having a perfect week this week with all of my circles completed. It didn’t happen. Six days out of seven I’m taking and doing a high five to myself. Even God rested one day. I have to work out something I couldn’t do the rest of my life – not a quick fix. If I take one or two days off, good for me. I love my Apple i-Watch. It gets me up/going and reminds me to do such. However, it also brings out the OCD in me and being perfect. I have to find an equal balance.”
“Dear Journal – I broke down and found a pair of jeans that actually fit and didn’t seem like a family had moved out of them. So from a size 26 to now a size 22. And I actually bought my first ever button up shirt. I have *never* worn button up shirts for obvious reasons. With my breast size they way the were, button up shirts did not stay buttoned up. My shirts were a 3XL and now I’m down to 1XL. Small changes but it’s working this plan of mine. I keep on walking. Who knows what this summer will bring.”

Update on my Air Fryer. Let me introduce you to Elite – my air fryer. Fits nicely on the counter and has little suction cups to keep it stable. One of the meals we prepared this week was steak and waffle fries – both done in the air fryer. The steaks came out awesome. We cooked two this size at one time around 5 minutes. Next time, I will take the time down a bit for more our liking. The waffle fries cooked 4 minutes and came out perfect! They were crunchy and awesome!!

Week of 01/21-01/27/2018 – Week 3 (MILES MOVED: 5.96)
“Dear Journal – Slow and easy wins the race. Recuperation from my surgery is going well; however, my rheumatoid arthritis is deciding to flare up. I went back on a different RA medicine. It so hates me and is not agreeing with my body. I will give it another week to settle. If it doesn’t, then we will go to plan B… whatever that might be. I want to get back into my exercising. It’s true what they say. Trying to get back into a plan is the hardest thing in the world. I was really burning some miles and then I had to stop because of surgery. It’s hard finding my way back. But I will! I am determined if not anything else. At least my food choices have been on key – that’s definitely a plus. Wouldn’t it be great if we could all eat anything we wanted with no consequences? I’m not as young as I was once – LOL.”
Week of 01/28-02/03/2018 – Week 4 (MILES MOVED: 5.62)
“Dear Journal – This week started slow. I had some type of virus going around the office. I’m so thankful that we share everything – not! I was home Monday/Tuesday which also led me to the point of coming off of my RA medicine. It so was not agreeing with my body. I’ve been speaking with my doctor back/forth about it and we both decided to stop it. For the past three months, I worked on a pain management plan. I think I’m going to stay on that for a while. I need my body to catch up and even out. It’s been hard these past three months going through so many physical changes. I’m happy with the surgery. I just need things to chill out now with everything else. Can you believe it’s been almost three months since surgery? Sometimes it just seems like yesterday. I so should have done this years ago! I feel like a new person in that aspect.”
Oh and by the way, I bought an air fryer for the house. I’m going to be using it in the future and hopefully sharing with you some awesome recipes. Do you have one? If so, share some recipes. An air fryer circulates heat at a high speed around the items that you are cooking. This produces a crispy top layer to what you are cooking. It doesn’t use oil like you would if you fried foods. And being in the south, we know our fried foods. Using an air fryer will hopefully help our waistlines in cooking healthier and eating more at home. I will keep you updated on what foods we cook.
