This month was a free for all. Five items of your choice for any meal or dessert or appetizer – it’s your choice.
Knowing this, my mom went all out – snorts. I am going to tell you about the hottest thing that mom has eaten lately. She gets this salad every.chance.she.can. Notice I said “get” and not “fix” – snorts with piggy laughter. Okay, this month mommy is cheating by not fixing this delectable, gorgeous salad. She has been on this DIEt thing lately – not only to lose weight but to get a few of her numbers down in her bloodwork.
Well, my daddy is a meat eater – go figure huh? There is a local steakhouse that he absolutely loves to go to and will jump at the chance anytime he can. But here’s the great spot, mom loves this Strawberry Pecan salad they have and she says it’s a meal for her. What daddy does is order his steak and upgrades his salad to this masterpiece for like less than $2.50 – can you believe that?! That way, daddy gets his Flintstone steak and mom gets her beautiful salad.
And on this beautiful salad is red onions, grapes, strawberries, pecans, oranges and lettuce. It is topped with a strawberry vinaigrette. Can you taste it? I told mommy that this little oinker wouldn’t even mind this salad for dinner. What about you?

Strawberries? We are approaching winter here …
Had a really lovely salad last Friday, though, when cooking with friends. Some green salad of choice (we took one called Romana salad here which you can get all year round), caramelized pears, mild soft bluecheese, walnuts and some fried pumpkin slices in a balsamico vinaigrette with a few spoons of apricot jam. But I cannot give you the prices of those items, I was not the one to buy them.

This one is perfect. Mom has done it here at the Hotel Thompson also. Of course, it doesn’t look as beautiful as this one which is beautiful… I think mom’s words were when it was delivered to the table she heard angels singing… snorts. XOXO – Bacon

oh that looks great… do you have any idea how we can make such a strawberry vinaigrette with out own paws?

1 package of frozen unsweetened strawberries (16 ounces); 6 tablespoons of lemon juice; 1/4 cup of sugar (or other sweetener); 2 tablespoons of cider vinegar; 2 tablespoons olive oil; 1/8 teaspoon poppy seeds (optional).
Place strawberries in blender and puree. Add lemon juice and sugar and continue to blend. While blending, gradually add vinegar and oil in a steady stream until liquid is thickened. Stir in poppy seeds (optional). Cover and store in fridge.

I know! Mom keeps frozen ones in the freezer all year just for different recipes – like now this salad or for pound cake toppings. mmm – another great one! XOXO – Bacon

The vinaigrette should be easy, Easy. Just oil and vinegar with strawberries. It doesn’t sound so good…maybe look it up on-line Easy. You’d have to blend the strawberries into the O and V.
Your salad is looking great and very tasty. A diet wouldn’t seem like a DIEt with this appetizer.

This salad is so yummy! For the longest time, mom would not get the strawberry vinaigrette. Then one day, on this salad, she said sure. She hasn’t turned it down since. It is so delicious and a meal in itself. She usually lets daddy get his stead and she eats this salad for her meal. So wonderful. XOXO – Bacon
